WE WORK WITH LOCAL AND ORGANIC INGREDIENTS
Every good dish (mmm, check the menu) starts with good ingredients. We work closely with small producers and local brands in Vienna and beyond, from mushroom and microgreen farms to kombucha brewers and specialty coffee roasteries. We choose the people and products we genuinely believe in, bringing quality, local and organic products in Vienna into what we serve at SALZI.
And some of our favorites don’t have to stay at SALZI. You can take them home from our deli shelf, too.
Coffee
We work with quality roasteries, carefully choosing beans we genuinely love and we're always up for experimenting with something new.
We've featured Röast, Rosa, Erika and Kafana before; right now we have different variations from The Barn Berlin. Always ask what's on the grinders!


mushrooms
We're so lucky that Pilzbrüder is only a block away from us in the 2nd district. Martin and Otto Kammerlander grow incredible mushrooms and are genuinely curious about how chefs bring them to life in the kitchen. We use their oyster, enoki and shimeji mushrooms across both our brunch and dinner menus.
microgreens
We work with Rosenberg Farm, a producer of organic microgreens like coriander, broccoli, carrot and pink amaranth. These greens usually end up in our salads or as a finishing touch on most of our savoury dishes.


kombucha
We love kombucha! We used to make our own, but after trying these kombuchas, we leaned into drinking only theirs. First up is Bootch, an Austrian brand, we've even hosted fermenting workshops with them at SALZI, and we love their gingery, citrusy taste. The other is FOLK, from Copenhagen, with a palate that's totally different from Bootch's.
tea
Rami Tea is a Viennese specialty tea brand we work with. We source a range of teas, from mild to more intense from them. Get tea drunk with us!


TOFU
Just a few blocks away from SALZI, Wiener Tofu takes a minimalist approach while preparing the highest-quality tofu. They make everything in-house, combining traditional Chinese tofu-making with Austrian ingredients.
We use it as vegan egg and extra topping, but it’s also the main ingredient in some of our evening dishes.
MATCHA
Good matcha starts with good tea.
We use the highest grade ceremonial matcha from Hungarian tea shop Zhao Zhou, sourced from ancient tea trees. Because when it comes to a good cup, the quality of the powder matters.
